My recipe variation
2 Tbs Olive Oil
2 lbs Venison Back strap
Salt and Pepper
2 Tbs Salted Butter

5 Shallots chopped
4 Garlic whole cloves crushed
1 1/2 tsp Dried Thyme
1 Dried Bay Leaf
3 Bacon Strips
350 ml Red Wine
350 ml Chicken and Beef stock combined
2 oz Grate Dark Chocolate

Pre-heat oven to 400°.
Brown seasoned venison in hot, oiled pan. Once browned, add butter and baste both sides at least twice. Wrap each piece in foil and place on a baking sheet. Put the sheet on the middle rack in your oven for 8 minutes. Once completed set remove from oven and let rest for at least 10 minutes.

In the same pan put butter shallots, garlic, thyme, bay leaf and bacon. Saute until tender then as wine and reduce on a simmer for 15-25 minutes. Add broth and reduce for another 15-25 minutes.

Stain sauce and add chocolate. If not dissolved return to heat and stir until combined.

Cut venison about a finger width and serve with mashed potatoes, brocolli and sauce.
