Today I have a super easy and super delicious venison recipe for you: Smoked Backstrap Fajitas. The recipe goes like this:

1. Season venison backstrap with your favorite seasoning. For this video I used Special Shit seasoning
2. Wrap backstrap in bacon.
3. Using apple wood in your smoker, smoke the backstrap for 2-2.5 hours at 225 degrees.
4. You can eat one or some backstrap right away, but for the best fajitas, immediately wrap the backstrap in foil and stick it in the fridge for at least 1 day. Putting the foil wrapped backstrap in the fridge for a day or two will help the meat and smoke flavor setup to perfection.
5. When you are ready to make fajitas, slice the backstrap and bacon, add peppers and onions, and saute in olive oil.

When this is done, I’m telling you…this meat will be LIKE CANDY!
