PREP + COOKING TIPS
🔥 Season the lamb on both sides with salt, pepper, and cumin – don’t be shy.
🔥 Brush or spray the lamb with a bit of oil before cooking. This stops the meat from sticking to the pan or grill plate.
🔥 Before you cook, preheat the pan or grill plate to hot. Then, reduce the temperature to moderately hot to ensure the lamb doesn’t burn.
🔥 Cook quickly over moderately high heat so it browns well, but doesn’t dry out.
🔥 Cook the first side until the first sign of moisture appears on the surface of the meat. Then continue to flip every minute or so, cooking a total of 6 minutes for medium.
🔥 Rest the lamb for a few minutes before slicing against the grain and serving.
